Sweet Potato Kugal

Serve pareve Sweet Potato Kugal along with your kosher turkey to give your American Thanksgiving meal a Jewish flavor.

Ingredients:

  • 3-4 sweet potatoes
  • 1/4 cup brown sugar
  • 3 Tbsp margarine
  • 4 eggs, beaten
  • 2 tsp. vanilla
  • 1/4 tsp. cinnamon

Preparation:

1. Peel and cut sweet potatoes into chunks. Put the potatoes in boiling water for about 20 minutes or until soft. Drain and mash with a fork.
2. Add other ingredients to the mashed sweet potatoes.
3. Pour into a greased baking dish.
4. Bake for 45 minutes at 350 degrees Fahrenheit.
