Cheese-topped Onion Soup

Soup always makes a meal more festive. This Cheese-topped Onion Soup can be served for the Shavuot festival meal.

Ingredients:

  • 75 grams (3 oz) butter
  • 6 large onions
  • 2 Tbsp. flour
  • 6 cups vegetable stock
  • 1/2 tsp. white pepper
  • 2 bay leaves
  • 6 slices of bread
  • 12 Tbsp. grated mozzarella cheese

Preparation:

1. Peel and cut onions into rings. Melt butter, add onions, and saute over low heat until the onions are transparent.
2. Add flour and stir until the flour turns golden.
3. Stir in the vegetable stock, pepper and bay leaves.
4. Bring to a boil and simmer over low heat for 1/2 hour.
5. Remove the bay leaves from the soup and pour the soup into six individual serving bowls.
6. Toast the bread. Cut the toast into squares. Drop squares into soup and cover with 2 Tbsp of grated cheese.
7. Place the bowls of soup in a 400 degree Fahrenheit oven until the cheese melts.
