This cucumber salad has been a staple in our home since I got married. It is easy to make, healthy, and both adults and children like it. One of the advantages to living in Israel is that I can just walk outside to pick a fresh lemon from our lemon tree when I make this salad.

Ingredients:

  • 6 medium cucumbers by American standards (12 Israeli-sized cucumbers)
  • 2 tsp. salt
  • 2 Tbsp. lemon juice
  • 3 Tbsp. sugar
  • 1 medium onion, sliced

Preparation:

1. Wash cucumbers. Do not peel cucumbers. Slice them thinly by hand or food processor.
2. Sprinkle with salt and let sit for 20 minutes.
3. Drain.
4. Add lemon juice, sugar and onion.
5. Refrigerate for a few hours.
