Sweet, Nutty, Fruity Lettuce Salad

Rosh HaShana is a two day holiday during which there are several festive meals. A lettuce salad is one way to keep the meals on the light side. And a sweet salad is in the spirit of our wishes for a sweet new year.

Ingredients:

  • SALAD
  • 12 cups green lettuce
  • scallions
  • 1 red grapefruit
  • 1 cup almonds
  • 1/2 cup sugar
  • DRESSING
  • 1 1/2 cup vegetable oil
  • 3/4 cup white vinegar
  • 3/4 cup sugar
  • 6 Tbsp. parsley, snipped
  • 1 Tbsp. salt

Preparation:

1. Mix dressing ingredients (oil, vinegar, sugar, parsley and salt). Refrigerate for a few hours.
2. Wash lettuce.
3. Cut scallions.
4. Peel grapefruit.
5. Cook almonds in sugar over low heat in a skillet. When sugar is melted and nuts are heated, pour onto wax paper and let cool.
6. Just before serving the salad, mix the lettuce with the dressing. Top with some scallions, fruit and nuts.
