Since Rosh Hashanah is the day of judgement, it is customary to eat foods with symbolic meanings to invoke God's blessing.

Grace After Meals, with the addition of Y'aleh V'Yavo, "May there rise and come..." for the holiday, is recited at the end of the meal.
