On Rosh Hashanah, after a ritual washing of the hands, the blessing is made over two loaves of challah.
After the blessing, the challah is cut or torn into pieces and each piece is dipped in honey. This symbolizes hope for a sweet year. The custom of dipping the challah in honey continues until the end of Sukkot.
Blessing over Challah
Baruch atah Adonai, Elohaynu, melech ha-olam ha-motzi lechem min ha-aretz.
Blessed are you, Lord, our God, king of the universe who brings forth bread from the earth.
