Passover Carrot Kugel

This kosher for Passover carrot kugel is a tastey side dish for the Pesach Seder meal.

Ingredients:

  • 4 ounces margarine
  • ½ cup matzah meal
  • 1 tsp. baking powder
  • 3 Tbsp. potato starch
  • ½ cup sweet red wine
  • 1 pound carrots
  • 2 heaping ounces of raisins (optional)
  • 4 ounces sugar
  • 1 tsp. cinnamon
  • 1 egg beaten

Preparation:

1. Preheat overn to 350 degrees F. Grease 9 inch baking pan.
2. Cream together margarine and matzah meal.
3. Add baking powder and blend.
4. Dissolve potato starch in wine.
5. Combine all ingredients thoroughly.
6. Pour into greased pan and bake for 1 hour.
7. Recipe can be doubled and tripled. Recipe freezes well.
