Question: Why can't Jews eat tortillas during Passover?

Answer: Corn is not permitted to Ashkenazim, although some Sefardim actually permit roasted ears of corn at the Seder!

Secondly, if corn flour were made into a dough, there could well still be some natural leavening from the air-borne yeast. That is why even matzot are "rolled" with a multi-spiked device to recent the possibility of inadvertent rising.

Besides, for eight days we can do without tortillas - no?
