| Recipe for Yidith's Liver and Figs | |
Yidith says, "I don't have the exact measurements because I just make this off the top of my head. Enjoy."
Ingredients
for two people:
Chicken or beef liver - one pound
Figs - fresh or canned,
at least six, cut in half
Raisins- yellow, half a cup
Apple - one large,
chopped
Juice - apple or orange, at least one cup
Lemon or Orange Peel -
grated
Garlic - one or two cloves
Onion - one large, chopped
Honey or
Brown sugar - at least half a cup
Salt and Pepper
Vinegar - a dash
Mustard
- a dollop
1.
Sear liver in very hot oil in a deep pan until the outside is crisp (don't overdo
it)
2. Add the onions and garlic; brown them.
3. Lower heat, then add fruit
juice with vinegar and mustard - liver and onions should be completely covered.

Simmer softly and add add remaining ingredients.
5. Cover the pan. Simmer until
the liver is well-done on the inside (about 15-20 minutes)
Optional extras: A dash of Turmeric or Cardamom, Capers, Mandarin slices(last minute), Pineapple, Mint or Tarragon.
Serve with (wild) rice or mashed potatoes or toast and a crisp salad on the side.
