Recipe for Onion Quiche


* This recipe is based on a recipe from Savory Pies (Pashtaydot) by Kobi Bar (Modan Publishers).

100 grams butter
5 large onions, chopped
250 ml. sweet whipping cream
4 eggs
50 grams yellow cheese, grated
4 Tbsp. flour
1 Tbsp. corn starch
nutmeg, salt and white pepper, according to taste

Preheat oven to 350 degrees Fahrenheit. Grease an ovenproof dish or casserole.

Melt the butter in a large frying pan. Fry the onions until soft and transparent. Add the cream, stir, and cook for 2 more minutes. Remove from the heat, and let cool.

In a bowl, combine eggs, cheese, flour, and corn starch. Add the onions and cream. Stir well. Spice with nutmeg, salt and pepper according to taste.

Pour the mixture into the greased ovenproof dish. Bake for 50 minutes. Let cool for 10 minutes before serving.
