8 zucchini, sliced in half lengthwise
2 large onion, diced
2 clove garlic, minced
1 green pepper, diced
1 tomato chopped, with seeds removed
oil for sautיing
2 tsp. salt
1 tsp. pepper

1. Scoop out zucchini halves, leaving shells.
2. Sautי onion, garlic, green pepper, and zucchini insides in oil for a few minutes.
3. Add tomato and seasonings. Sautי a few more minutes.
4. Scoop mixture back into zucchini shells.
5. Bake on a cookie sheet in 350 degree Fahrenheit oven for one hour.
