1 egg white from a large egg
1 cup brown sugar
pinch salt
1/4 tsp. nutmeg
1 1/2 cups chopped pecans

Beat the egg white until soft peaks form. Add the sugar and salt gradually, beating constantly till mixture is stiff and glossy. Stir in nutmeg and pecans. Drop by tsp. onto greased cookie sheet. Bake in low oven at 120 degrees Celcius till tops are firm, about 30 minutes. Transfer immediately to a wire cooling rack or a cold marble counter.
